Bhavnagar district in Gujarat is where most Indian dehydrated onion is made, and buyers should know that the district is larger and more varied than the name Mahuva suggests. A November 2024 report in The Federal put Gujarat's dehydration units at about 160, with about 120 of them in Bhavnagar district and the rest in Amreli and Rajkot districts. Treat those numbers as indicative, since units open and close each season.
For a buyer, that concentration is useful and risky at once. It gives you choice, but it also means many offers with the same district address and very different plants behind them.
Where in the district the plants are
Most units sit in and around Mahuva taluka, on the southern coast of the district, close to the white onion fields and the Mahuva market yard. Bhavnagar city, about 90 to 100 km to the north by road, has the district's other large onion market and is where some companies keep offices, bankers and accountants.
This matters because the address on an offer is often the office, not the plant. An exporter with a Bhavnagar city address may dry its onion in a unit near Mahuva, or buy from several units. Always ask for the plant address and check it on a map before you visit or pay.
The raw material behind the district
Gujarat is widely described as India's largest grower of white onion, the type preferred for dehydration because of its pale colour and high dry matter. Bhavnagar and neighbouring Amreli are among the main growing districts, with Rajkot, Junagadh and Gir Somnath also contributing. Plants buy at the local market yards and directly from farmers.
Garlic is different. Some garlic is grown in Saurashtra, but plants also bring fresh garlic from other states. If you buy dehydrated garlic, ask where the bulbs for your lot came from. See Gondal and Rajkot garlic markets and garlic from Madhya Pradesh for the main sources.
What the district's setting means for quality
A few local conditions affect the product, and a good plant will have an answer for each one.
- Coastal humidity: the district is on the Gulf of Khambhat and the Arabian Sea, and the monsoon from roughly June to September brings high humidity. Powder packed in a humid room picks up moisture and can cake. Ask about packing room humidity control.
- Water quality: parts of coastal Saurashtra face saline groundwater. Washing water must be safe and consistent, so ask for the latest water test.
- Weather at harvest: unseasonal rain or storms during the main arrival period can damage fresh onion stocks and push up costs. Book ahead and keep a second plant in view.
- Seasonal labour and load: in peak weeks, plants run long shifts. That is when hygiene slips, so it is the right time to audit.
Size and type of unit
The district has everything from large plants with several belt dryers, steam sterilisation and food safety certification to small units that dry only in season and sell flakes to others for milling. Neither is automatically right. A small plant may suit a buyer who needs one container a year. A larger plant may suit a buyer who needs dehydrated onion in several forms on a fixed schedule.
What matters is that you know which kind you are dealing with. Our guide on buying from a trader or a processor and how to audit a dehydration plant in Mahuva set out the checks.
Ports and paperwork
Pipavav port lies just across the district border in Amreli and is the nearest container port to most Bhavnagar plants. Mundra and Nhava Sheva are also used. Export documents, including the phytosanitary certificate and certificate of origin, are arranged by the exporter, so check them before shipment. The document pack your broker will ask for lists what you need.
