Mahuva, in Bhavnagar district of Gujarat, is where most Indian dehydrated onion is made and where most overseas buyers start: many plants, local white onion and short trips to Pipavav and Mundra. Maharashtra is widely reported as India's largest onion growing state, but most of that crop is red onion for the fresh market, and its dehydration capacity sits in fewer, often larger and more integrated units.
For most buyers, Mahuva gives the widest choice of plants and grades. Maharashtra is worth looking at when you want a large integrated processor with contract farming, a second Indian region to spread crop risk, or shipment through Nhava Sheva.
Raw onion
Dehydration needs white onion with high dry matter. Farmers around Mahuva and across Saurashtra grow white onion for the dryers, and plants process it as it arrives, mainly from around the end of the year into spring. The onion harvest season for dehydration in Gujarat sets out the windows.
Maharashtra's onion belt, around Nashik and the Lasalgaon market, is dominated by red onion sold fresh in India and abroad. White onion for dehydration is grown in smaller areas, and Jalgaon district is known for contract farming of white onion for processing. Maharashtra has kharif, late kharif and rabi crops, and its rabi onion is widely stored, which can extend the supply window. Our guide to dehydrated onion from Maharashtra goes into the districts.
How the two compare
- Number of plants: Mahuva has a dense cluster of plants of every size. Maharashtra has fewer dehydration units, so choice is narrower.
- Plant type: Mahuva ranges from modern certified units to small seasonal dryers and traders with no plant. Maharashtra capacity leans towards fewer, larger operations, though small units exist too.
- Raw material control: contract farming gives some Maharashtra processors more control over variety and residues. In Mahuva, many plants buy from farmers and local markets, so residue testing per lot matters more.
- Colour: both dry mainly white onion. Red and pink dehydrated onion are made in smaller volumes; see white, red and pink dehydrated onion.
- Garlic: Mahuva plants commonly dry garlic as well, so onion and garlic can share a container. Check this with any Maharashtra unit before you plan a mixed load.
- Ports: Mahuva ships mainly through Pipavav and Mundra. Maharashtra ships mainly through Nhava Sheva near Mumbai. All three are well served by main line carriers.
- Services: Mahuva has local labs, carton makers and inspection agencies built around the cluster. Maharashtra units rely more on services in Nashik, Pune or Mumbai.
Cost drivers
In both regions the largest cost is fresh onion, and its price moves with the crop, weather and Indian export policy. How fresh onion prices affect dehydrated onion prices explains the link. Because Maharashtra's red onion market is so large, a bad season there can move prices across India, including the white onion that Mahuva uses. Freight from either region to most destinations is similar. We do not quote prices.
What a buyer should check in either region
- Who dries, mills and packs your goods. A Mahuva or Nashik address alone tells you nothing.
- Sterilisation: in house, outsourced or not offered.
- Metal detection, sieving and packing room hygiene.
- Food safety certification and the scope it covers.
- Lab results per lot for moisture, microbiology, pesticides and ethylene oxide from an NABL-accredited lab.
- Stock age: ask for the manufacturing date, so you know which crop you are buying.
Using both
Some buyers qualify one plant in each region. If unseasonal rain hits Saurashtra, a Maharashtra supplier may still have stock, and the reverse. It adds audit and testing work, but it reduces the risk of one region's bad year stopping your line. How we help
We are based near the Mahuva cluster and can assess plants in either region against your spec for dehydrated onion and dehydrated garlic. We audit the plant, test every lot at an NABL-accredited lab, supervise loading and check documents, for one written fee agreed in advance. To decide which region fits your order, book a free sourcing review.
