Roasted and toasted garlic from India, tested before it ships

Dried garlic roasted to a golden colour for a sweeter, nuttier note, as minced, granules or powder. We find a plant that runs a roaster and test every lot.

Roasted or toasted garlic is plain dehydrated garlic heated further in a roaster until it turns golden or light brown and takes on a sweet, nutty, cooked flavour. Seasoning, snack, soup base and sauce makers buy it where raw garlic would taste too sharp. Fewer plants make it than plain garlic, and the main risks are roast level drifting between batches and burnt pieces that taste bitter. We work for you, not the factory: we find plants that actually run a roaster, check them in person and test the goods before you pay the balance.

Uses

Where buyers use it

  • Seasonings and rubs

Roasted garlic granules and powder give a deeper, rounder garlic note in dry blends and barbecue rubs.

  • Snack coatings

Snack makers use roasted garlic powder for a cooked, savoury flavour that raw garlic powder does not give.

  • Soup and sauce bases

Dry soup bases, gravies and sauce mixes use roasted garlic for a sweeter, less pungent result.

  • Toppings and bread mixes

Roasted minced garlic adds colour and a toasted taste to bread toppings and savoury crumb mixes.

Ordering

  • A sealed reference sample of the approved roast level, kept on both sides
  • A limit on burnt or black particles
  • Flavour free from burnt, bitter or rancid notes, judged against the reference
  • A written statement of any oil, salt, sugar or flavouring added, or that none is
  • Full microbiology and Salmonella absent in 25 g, not relaxed because the product is roasted
  • Untreated or steam sterilised, with an ETO-free declaration and test
  • How the plant controls roast time and temperature from batch to batch

Shipping

HS code, packing and loads

  • HS code

Plain dried garlic sits under 0712.90, but roasted garlic may be treated as further prepared and fall in chapter 20 or 21, depending on the processing. Ask your customs broker for a classification before the first order.

  • Packing

Cartons with sealed polyethylene liners, as for plain garlic. Roasted product picks up moisture and loses aroma quickly once opened, so keep liners sealed until use.

  • Container load

Roasted garlic is usually a small line, often shipped in a mixed container with plain garlic or onion. Ask for the plant's last actual loading of the same form and pack.

  • Shelf life

Ask the plant for its stated shelf life and how it set it, as roasted product can lose aroma faster than plain grades. Store sealed, cool and dry.

Questions

Roasted and toasted garlic: common questions

Is there a difference between roasted and toasted garlic?

Suppliers use the two words loosely. In most quotes both mean dry heat with no oil. Ask the plant to state in writing whether any oil, salt, sugar or flavouring is added.

Which forms of roasted garlic are available from India?

Some plants offer roasted garlic as minced, granules or powder. Larger flakes are roasted less often because they colour unevenly. Ask early and approve a sample of the exact roast level.

Does roasting make garlic safe from Salmonella?

Not on its own. Roasting is a heat step, but it is not a validated kill step unless the plant can show it is. Keep your Salmonella and plate count limits and ask for lab results on each lot.

Is roasted garlic less pungent than plain dehydrated garlic?

Yes, it is deliberately milder and sweeter. Judge it by a sensory test against the approved reference rather than by an allicin figure set for raw garlic.

Do you sell roasted and toasted garlic?

No. Creston & Co is a sourcing agent. You buy directly from the plant we help you choose, and we work for you: audits, lab tests, inspection and loading supervision, for a fee agreed in writing.
