Why does onion powder cake, and how do I prevent it?

Onion powder cakes because it is hygroscopic and rich in natural sugars, so it absorbs moisture and sticks. Prevent it with low moisture at packing, sealed liners and cool, dry storage.

Onion powder cakes because it is hygroscopic and rich in natural sugars. It absorbs moisture from the air, the surface of each particle becomes sticky, and particles bond into lumps that can harden into blocks.

You prevent it mainly by keeping moisture out: low moisture at packing, sealed liners, careful handling and cool, dry storage. Anti-caking agents can help, but they bring labelling and market rules with them.

What makes caking worse

  • Moisture above spec when the powder is packed.
  • Packing in humid weather or in an open, damp room.
  • Liners not sealed, or torn during handling.
  • Heat in storage and transit, which speeds up stickiness.
  • Pressure from heavy stacks, which presses particles together.
  • Very fine powder, which has more surface area to absorb moisture.
  • Temperature swings in containers, which can cause condensation inside packs.

Prevention at the plant

  • Mill and pack in a dry area, ideally with controlled humidity.
  • Cool the powder before packing so warm product does not sweat in the liner.
  • Test moisture just before packing, not only at the dryer.
  • Use double polyethylene liners, sealed properly.
  • Pack powder in cartons or strong multiwall bags that resist crushing.

Prevention in transit and storage

Container desiccants help on long voyages through hot, humid regions. Keep goods out of direct sun at ports. Once landed, store powder in a cool, dry warehouse and do not stack it too high. Use stock in order of manufacturing date.

Open packs only when needed and reseal them well. A partly used carton left open in a humid factory will cake within days.

Anti-caking agents

Some buyers ask for a flow agent such as silicon dioxide to be added to onion powder. Whether it is allowed, at what level and how it must be labelled depends on your market and your product. Many buyers prefer a pure product. Read whether anti-caking agents are allowed in spice powders and check the current rules with your own food authority before asking for one.

If you do agree an additive, put the name, level and grade in the contract and test for it. Never let a supplier add anything without written agreement.

Lumps are not always a disaster

Soft lumps that break with light pressure can often be sieved and used. Hard blocks usually mean moisture rose well above spec, and the product may also have darkened or lost flavour. Test moisture and colour before deciding. If it is a supplier fault, raise a claim with photos, test results and the retained sample. Caking is one of the most common complaints from buyers of dehydrated onion.

Where we come in

We check moisture on pre-shipment powder samples at an NABL-accredited lab and watch packing conditions at the plant. If caking appears on arrival, we help you gather evidence and pursue a claim with the supplier. Start with a free sourcing review.
