How does fresh onion price affect dehydrated onion prices?

Fresh onion is the main raw material cost, and several kilos are needed for each kilo dried. When fresh white onion prices rise, dehydrated onion prices usually follow fairly quickly.

Fresh onion is the largest cost in dehydrated onion, so its price moves dehydrated prices directly. Because several kilos of fresh onion are needed for each kilo of dried product, a small rise in the fresh price becomes a much larger rise per kilo of finished goods.

The link is fastest for product dried from new purchases. Plants holding stock bought at lower prices may hold their quotes for a while, but replacement cost soon catches up.

The yield effect

The ratio of fresh to dried onion depends on the dry matter in the crop. White dehydration varieties have higher dry matter than table onion, but the figure still varies by season and field. A crop with lower dry matter needs more fresh onion for the same output.

So two things matter: the price of fresh onion and its quality. A cheap crop with low dry matter is not always cheaper to dry. Ask suppliers how this season's yield compares with last year.

What moves the fresh price

  • Arrivals in local markets, which rise and fall with harvest progress.
  • Weather: unseasonal rain, heat or a poor monsoon can cut supply.
  • Domestic demand: onion is a staple in Indian cooking, so home demand is large and steady.
  • Prices in other producing states, which pull onion between regions.
  • Government measures on fresh onion exports and stock limits.
  • Storage: how much rabi onion farmers and traders hold back for later sale.

Domestic demand comes first

India consumes most of its own onion crop, and onion prices are politically sensitive. When fresh prices rise sharply at home, the government has in the past restricted exports. India banned onion exports from December 2023 and lifted the ban in May 2024 with conditions such as a minimum export price and an export duty for a period.

Whether a given measure covers dehydrated forms depends on the notification. Check the current position with DGFT before you assume either way. How government export bans affect supply explains how these decisions work.

Watching the signals

  • Ask your supplier for a short weekly note on fresh arrivals and prices near Mahuva.
  • Watch news on crop conditions in the main onion states.
  • Note when the rabi crop is going into storage, which supports prices later in the year.
  • Track your own quotes over time so you can see the pattern for your form and grade.

Managing the risk

If fresh prices are low and the crop is good, booking part of your annual need can protect you from later rises. If prices are high, smaller orders and shorter commitments may be wiser. How dehydrated onion prices are set covers the other cost factors and the timing of seasonal lows.
