What is cluster bean, and is it sold as food or for guar?

Cluster bean is the guar plant. Tender pods are eaten as a vegetable, fresh, frozen or dried, while the mature seed is split to make guar gum. They are different products and supply chains.

Cluster bean is the guar plant (Cyamopsis tetragonoloba). It is sold both ways. Tender green pods are eaten as a vegetable, known in India as guar phali or gawar, while the mature dry seed is processed into guar split and guar gum.

The two trades use different varieties, harvest stages and buyers. When a supplier says cluster bean, ask whether they mean the vegetable or the seed.

Where it grows

India grows most of the world's guar. Rajasthan is by far the largest producer, followed by Gujarat and Haryana. North Gujarat and Kutch grow guar as a rain-fed monsoon crop, harvested roughly October to November.

Vegetable types are grown closer to towns, often with irrigation, so pods can be picked young and sent to market or processors quickly.

Cluster bean as food

  • Fresh pods: sold in India and to some nearby markets by air. Shelf life is short.
  • Frozen pods: cut or whole, sold through South Asian grocery channels abroad.
  • Dehydrated pods: dried for curries and snacks, often from processors who also dry other vegetables.
  • Canned or ready meals: as an ingredient in prepared Indian dishes.

Cluster bean for guar gum

Mature guar seed is split, and the endosperm is separated and milled into guar gum powder. The husk and germ become guar meal, used in animal feed. Guar gum is used as a thickener in food and, in larger volumes, in industrial uses including the oil and gas industry.

This is a separate industry with its own grades. See the difference between guar split, guar meal and guar gum powder and what guar gum is and where it is produced.

Quality points for the vegetable

  • Pod length, tenderness and colour, with limits on fibrous, overmature pods.
  • For frozen: blanching, freezing speed, ice glaze and cold chain records.
  • For dehydrated: moisture, colour and microbiology.
  • Pesticide residues: vegetable crops are often sprayed, so test against your market's limits.
  • Plant health rules: fresh vegetables may need a phytosanitary certificate. Check with your own authority, as in whether dehydrated vegetables need a phytosanitary certificate.

Price drivers differ

Vegetable cluster bean prices follow local vegetable markets and season. Guar seed prices are linked partly to industrial demand for guar gum, so they can swing with conditions in that industry and with the Rajasthan monsoon.

If you buy the vegetable, plan around the growing season and the processor's cold storage or drying capacity. If you buy guar seed or split, plan around the monsoon crop and arrivals after harvest. Do not use a price trend from one trade to judge the other.
