There is no single price per kg for dehydrated onion or garlic. The figure depends on the form, colour grade, microbiology, treatment, packing, incoterm and above all the cost of the fresh crop that month, so any number quoted without those details means very little. This page does not give prices. It explains what is driving costs at the moment and where you can see current figures from public sources.
Last reviewed: October 2026. We update this page each month. Treat everything below as a guide to the market, not a quote. A real price comes only from a plant, for a stated specification, on a stated date.
Why we do not print a number
Two quotes for white onion powder can be far apart and both be fair. One may be steam-sterilised with a low total plate count, packed in cartons with double liners and quoted CIF to Rotterdam. The other may be untreated, packed in bags and quoted FOB Pipavav. Printing one figure would hide those differences and push buyers towards the cheapest line, which is often the riskiest.
Directory and marketplace listings show asking prices, often undated and with no specification behind them. They are not transaction prices. We did not find a dated public source in trade press or official statistics for October 2026 that reports export prices for dehydrated onion or garlic by form, so we do not repeat any figure here.
What is moving costs in October 2026
Late October sits between crops for Gujarat onion. Plants in the Mahuva cluster usually dry most heavily when white onion arrives from roughly the end of the year to around spring, then mill powder, granules and smaller cuts from stocked flakes for the rest of the year. Our guide to the onion harvest season for dehydration in Gujarat sets out the usual windows.
That means two things for anyone buying now. Goods offered today are mostly made from flakes already in stock, so ask for the production date. And prices for the coming season will depend on how the new crop sets and arrives, which plants cannot know yet. Expect offers for new crop to firm up only as arrivals build.
Garlic follows a different calendar. The fresh harvest in India falls roughly February to April, and dehydration plants dry most of their garlic after it arrives. Fresh garlic prices in the main Gujarat, Madhya Pradesh and Rajasthan markets feed directly into dehydrated garlic quotes, as explained in how Gondal and Rajkot garlic prices reach your quote.
The cost drivers to watch
- Fresh crop cost: several kilos of fresh onion or garlic go into each kilo of dried product, so mandi prices are the largest single factor.
- Yield: dry matter varies by season, which changes how much fresh material each kilo needs.
- Energy: belt dryers use a lot of heat, so fuel and power costs matter.
- Form and grade: powder adds milling, and whiter grades or tight size bands cost more.
- Treatment: steam sterilisation for low microbiology adds a processing step.
- Packing and freight: liners, cartons and inland transport to Pipavav or Mundra.
- Demand and exchange rate: heavy export demand and the rupee against your currency both move the final figure.
Where to see current figures yourself
You can follow the market with public sources. None of them gives a dehydrated onion quote, but together they show which way costs are heading.
- Agmarknet, the Government of India's agricultural market portal, publishes daily arrivals and prices for fresh onion and garlic at regulated markets, including markets in Bhavnagar and Rajkot districts.
- Lasalgaon market in Nashik district is widely followed as a benchmark for fresh onion in India, and its prices are reported in Indian business press.
- UN Comtrade and the OEC publish export values and quantities by HS code. Dividing value by quantity gives an average unit value, but it mixes every form and grade and runs months behind.
- APEDA, India's agricultural export body, publishes export statistics for dried vegetables on its website.
How to read a quote this month
Compare like with like: the same form, size range, colour grade, moisture limit, microbiology, treatment, packing and incoterm. Comparing quotes from Indian exporters gives a checklist, and how dehydrated onion prices are set and how fresh onion prices affect dehydrated onion explain the mechanics in more depth.
A quote far below the others usually means a lower grade, untreated product, higher moisture, lighter packing or a trader reselling another plant's goods. Ask how long the price is valid, and whether it holds if fresh crop prices move before you confirm.
If you buy regularly, booking part of a season's volume while the crop is arriving can reduce exposure to later swings. See forward or seasonal price booking and our guide to buying dehydrated onion in bulk.
