Hamburg is the obvious landing point for Indian dehydrated onion and garlic going to northern Germany. It is Germany's largest container port, and the city has traded coffee, tea and spices for centuries. For a buyer based here, the container often clears a few kilometres from the office.
The national rules are in importing dehydrated onion and garlic from India into Germany. This page covers what is specific to Hamburg.
Arrival and inspection
Containers from India arrive at the container terminals on the south bank of the Elbe, usually after transhipment somewhere on the Asia to Europe route. Food from outside the EU is subject to official controls at the port. In Hamburg, the Veterinary and Import Office (Veterinär- und Einfuhramt, VEA), part of the city's Authority for Justice and Consumer Protection, runs the border control posts at the port and airport. Its remit covers food of animal origin and some plant foods from third countries, and it has a customer office for imports of food of non-animal origin.
If dehydrated onion or garlic from India is on an EU increased-check list at the time you ship, the consignment must be pre-notified and presented at a border control post. If it is not listed, it can still be sampled at random. Either way, give your broker matching lot numbers on the invoice, bags and lab reports before the vessel arrives.
Hamburg's spice trade
The Speicherstadt warehouse district, now a UNESCO World Heritage site, was built to store goods such as coffee, tea and spices. Hamburg still has long-established spice importers and traders, and a share of what they buy is repacked or blended locally and sold on across Germany and Scandinavia. If you are a trader rather than a manufacturer, expect your customers to ask for the full certificate of analysis and a clear lot trace, because they will be asked for it in turn.
Who uses it in and around Hamburg
Northern Germany has meat processors, fish processors, ready-meal and delicatessen salad makers, and spice blenders. These buyers mostly want onion and garlic powder and granules for seasoning, with minced or chopped onion for salads, sauces and ready meals. Garlic granules are popular where a visible particle is wanted in a rub or blend. Read the difference between Indian and Chinese dehydrated garlic if you are comparing origins.
Climate and storage
Hamburg's climate is mild and damp for much of the year. Onion and garlic powder pick up moisture quickly once a liner is opened, so store them in a dry warehouse, keep liners sealed and use part bags quickly. See why onion powder cakes and how to prevent it and how dehydrated onion is packed.
Moving goods on
Hamburg is one of Europe's busiest rail ports, with daily container trains to southern Germany, Austria, the Czech Republic and Poland. A buyer in Munich or Prague can therefore still use Hamburg as the entry port, clearing there or moving the goods under transit. If you also buy for a site further west, compare the Bremen route through Bremerhaven.
