Dehydrated onion and garlic from India for buyers in Guadalajara

Guadalajara is about 300 km from Manzanillo, Mexico's main Pacific port. Here is what Jalisco's food processors should plan for when buying Indian dried onion and garlic.

Guadalajara, the capital of Jalisco, has a short and well-used route to the sea: the port of Manzanillo is roughly 300 kilometres away by highway. That makes it one of the most practical Mexican cities to receive Indian dehydrated onion and garlic arriving across the Pacific. For permits, testing and duty, start with importing dehydrated onion and garlic into Mexico.

Manzanillo to Guadalajara

Manzanillo, in the neighbouring state of Colima, handles more containers than any other Mexican port. Cargo from Mundra or Nhava Sheva is usually transhipped in Asia and arrives on a transpacific service. After clearance by customs and any SENASICA inspection at the port, containers reach Guadalajara by truck in a day, or by rail. Many distributors in the city also serve neighbouring states such as Michoacán, Nayarit and Aguascalientes, so goods are often split and reloaded in Guadalajara warehouses soon after arrival.

Lázaro Cárdenas, further south in Michoacán, is an alternative when Manzanillo is busy, though the road to Guadalajara is longer. Manzanillo can be congested in peak season. If your container sits waiting for a document, storage charges add up quickly, so make sure the requirement sheet and any COFEPRIS permit are in place before the ship arrives.

Who buys in Guadalajara

Jalisco is one of Mexico's main agricultural and livestock states, and among the leading producers of pork, eggs and milk. Guadalajara's food industry follows from that:

  • Meat processors and sausage makers, who use garlic powder and granules in chorizo and other cured products.
  • Salsa and hot sauce makers, a long-standing local industry, who use minced garlic and onion powder.
  • Seasoning blenders and snack makers who supply western Mexico.
  • Restaurants and caterers serving dishes such as birria and pozole, which rely on garlic and onion, and who buy through local distributors.

Climate and storage

Guadalajara has a long dry season and a rainy season from about June to September, when humidity rises sharply. Manzanillo, on the coast, is hot and humid most of the year. Dehydrated onion powder absorbs moisture fast, so do not leave containers standing at the port in summer, and keep warehouse stock off the floor and sealed. See how to stop onion powder caking.

Spec and testing for local buyers

Meat processors in Jalisco often sell to large retailers and exporters, so they ask for microbiology results per lot and sometimes steam-sterilised material. Ask the plant for salmonella, total plate count and Enterobacteriaceae results, plus ETO and pesticide screens. Salsa makers care more about colour, heat stability and particle size, because dried onion and garlic must disperse evenly in a liquid sauce without leaving specks. Agree a particle size range in millimetres or mesh, and send the plant a sample of your current material to match. See whether steam sterilisation changes flavour and why 2-chloroethanol is tested.
