Dehydrated onion and garlic from India for buyers in Genoa

Genoa is a main Italian gateway for Indian containers. Clearance and health checks happen at the port, so documents and lot-linked lab reports decide how fast goods move.

For many Italian buyers, Genoa is where dehydrated onion and garlic from India first touch Italian soil. Customs clearance and the Ministry of Health border check both happen at the port, so a Genoa importer or forwarder sees problems before anyone inland does. The national rules are in our guide to importing dehydrated onion and garlic into Italy.

The port and the border check

The Port of Genoa is one of Italy's main container ports, with terminals spread along the coast, including the large Prà-Voltri terminal to the west of the city. Containers from Mundra, Pipavav or Nhava Sheva usually arrive through the Suez Canal, though routings have changed at times when ships have been sent round Africa.

Health control of food of non-animal origin at the port is carried out by the Ministry of Health's USMAF-SASN office in Genoa, while the Agenzia delle Dogane e dei Monopoli handles customs. Every lot goes through a document check, and some are inspected or sampled. A sample means the container waits, so have the full pack ready before arrival: invoice, packing list, bill of lading, certificate of origin and lab reports that carry the lot number on the bags. See the document pack your broker will ask for.

A spice-trading city

Genoa was a great maritime republic, and in the medieval period its merchants traded spices and other goods across the Mediterranean and beyond. Today the trade runs on containers, and Genoa forwarders and customs brokers handle food cargo for buyers all over northern Italy and beyond. If your final customer is in Lombardy, Piedmont or Switzerland, clearing in Genoa and trucking on is a common pattern. For goods going on to Switzerland, which is outside the EU, ask your broker about transit procedures before the ship arrives.

Local use

Ligurian cooking is known for pesto, focaccia and seafood. Classic pesto is made with fresh garlic, so dried garlic matters more to industrial sauce makers, food service and seasoning blenders than to home cooks. Garlic granules and powder suit sauces and blends; minced onion suits dressings and toppings. Check the difference between Indian and Chinese dehydrated garlic before choosing a garlic source.

Storage by the sea

Genoa sits on a narrow strip between the mountains and the sea, so space near the port is limited, and many importers store goods at inland logistics sites in the Po Valley or in Piedmont. The coastal air is humid, which is a risk for powder in a container left standing in summer. Move cleared goods promptly and keep liners sealed. If a container is held for sampling in August, ask the terminal whether it can be kept out of direct sun, and check the powder for lumps when it is finally opened. See how dehydrated onion is packed.
